What We Taste
Uncommon sensuality. Ripe raspberry and red plum flavors and aromas, accents of sandalwood, spring flowers, spiced chocolate. Satiny mouth feel, elegant tannins, and sugar-dusted red fruit deliver a long, graceful finish. A beautiful expression of a southern California Rhone blend. :)
What We Made
45% Grenache, 45% Syrah, 10% Mourvedre. All from small, local vineyards (Palmador, Miramonte and Berean). Cold soaked for 5 days, fermented separately in 1 ton open top fermenters, punched down by hand 3x a day, finished with 4-5 days of maceration. Cooperage included 16 months of Marcel Cadet, Saury, Quintessence, Vallaurine, Radoux. 45% of of the oak was new French. 30% was 500L Dargaud & Jaegle puncheons. 513 cases produced. 13.8% ABV.
How We Serve
Serve at about 60 degrees. That's about 15-20 minutes in your refrigerator. Pairs incredibly well with poultry, leaner red meats. Absolutely gorgeous with grilled red salmon.
