2013 Verdelho

What We Taste
A beautiful rendition of Verdelho  Pristine pineapple and tropical fruit notes, bits of airy honeysuckle, fresh cut grass, and a wispy note of minty eucalyptus. Bright and alive with a long noble finish.  Perfectly refreshing on a hot summer day.  If you are unfamiliar with Verdelho, think of it as modestly similar to Sauvignon Blanc.

What We Made
85% Verdelho, 15% Vermentino (both Ramirez Vineyard).  The grapes were held in a 50 degree room right after harvest, then immediately whole cluster pressed.  This was followed by slow fermentation in stainless steel at a cool 48-50 degrees (3-4 weeks).  This was in turn followed by 6 months of cool maturation, 2 months of lees stirring.  This careful process allows us to capture the remarkable vibrancy and nuanced complexity capable of this up-and-coming grape variety.  594 cases produced.  13.2% ABV.

How We Serve
Nice and cool at about 50-55 degrees. That's roughly 25 minutes in your refrigerator before serving.  When in doubt, chill it a little longer. You can always bring it up to temp quickly --- and this particular wine shows beautifully at slightly cooler temps anyway.  Pairs perfectly with grilled white meats, and almost all things seafood. Enjoy it with grilled wild salmon and a fresh mango chutney. *gasp*
