2011 Tempranillo - PRIVATE RELEASE

What We Taste
A wine of bold sophistication.  Opens with fresh blackberries, black pepper, cranberries, and undercurrents of vanilla and fresh cut leather.  Modest tannins provide structure through a lengthy finish of sweet, ripe raspberries.  The finish has a lengthy, elegant, airy quality --- all-in-all, a wonderul expression of Southern California Tempranillo.

What We Made
88% Tempranillo, 12% Grenache (Wild Horse Peak, Palmador). After cold soaking the grapes 5 days, the juice was fermented separately in 1 ton open top fermenters, punched down 3x daily, then underwent a 5 day maceration.  Barrel aged for 18 months, 40% of that oak was new American.  Bigger picture, the Tempranillo was aged in 100% American oak, the Grenache in an assortment of Dargaud & Jaegle, Radoux, Vallaurine.  474 cases produced.  14.4% ABV.

How We Serve
At about 60 degrees. Cool it down 15 minutes in your refrigerator. Pairs incredibly well with bold preparations of pork, lamb, beef, poultry. Also a natural marriage for hearty stews --- like Morrocan Lamb Stew or a good ol' All-American Beef Stew.
