What We Taste
Fruit driven, flirtatious, delicious --- crafted in a sort of Rhone-meets-Beaujolais style. Opens with a certain purity of fruit, a sweet bouquet of ripe cherry with glorious accents of freshly cut spring flowers. Sweet strawberry and spicy potpourri notes dominate the mid-palate. Gentle tannins carry the whole package thru a satiny, sensual dark plum finish.
What We Made
47%% Cinsault , 53% Grenache. Cold soaked 5 days, fermented individually in 1 ton open top fermenters, punched down 3x a day -- but this is our one red that does not receive an extended maceration. 65% aged in stainless, 35% barrel aged in 9 months of second use French and American oak, including Seguin Moreau, Demptos, Radoux, Quintessence. 13.8% ABV.
How We Serve
Serve at about 55 degrees. That's about 20 minutes in your refrigerator. A wonderful casual sipper. Or pair it with leaner red meats, heavier fish, and all variety of salads (especially with meats).
